Unlike modern AI-powered roasters which prioritize speed, consistency, efficiency and hands-free roasting, we choose to roast in small batches using traditional gas roasters.
This old-school approach demands more attention, skill, and time, but it's precisely this hands-on method that allows us to coax out the unique character of each coffee.
The flames, the airflow, the scent—it all changes moment to moment, and a human must be there to respond with care.
Roasting slowly gives the beans time to develop complexity without rushing through crucial chemical reactions. It prevents scorching, allows sugars to caramelize more evenly, and draws out a smoother, more balanced cup.
It's not the fastest or cheapest way, but it's the one that honors the bean's origin and your experience in the cup. We use more than double the time than the average roaster to develop and caramelise the coffees after the first crack.
