The Decaffeination Process
The process of decaffeinating coffee involves several steps. First, the unroasted (green) coffee beans are soaked or steamed to soften them and open their pores. The goal is to prepare the beans for the extraction of caffeine.
There are several methods to extract the caffeine:
- Solvent-Based Process: The softened beans are rinsed with a solvent (usually ethyl acetate or methylene chloride) that extracts the caffeine while leaving other compounds largely intact. The solvent is then drained away, and the beans are steamed again to remove any remaining solvent.
- Swiss Water Process: This is a 100% chemical-free method. The beans are soaked in hot water to dissolve the caffeine. The water is then passed through an activated charcoal filter that traps caffeine molecules but allows other soluble compounds to pass through. This caffeine-free solution (known as "flavor-charged" water) is then used to wash new batches of beans, extracting caffeine but leaving much of the flavor compounds.
- Carbon Dioxide (CO2) Process: This method is primarily used for commercial decaffeination. Here, CO2 in a supercritical state (having properties of both a gas and a liquid) is used to extract the caffeine from the beans.
After decaffeination, the beans are dried back to their original moisture level and are then ready to be roasted.
